Swamp Cabbage-

Got this from some friends in North Florida
Cabbage (fresh cut if possible, and cut up)
1-1.5 lbs bacon
Salt & pepper
2 tbsp. sugar
1/2 to 3/4 cup Half & Half


Cut the bacon in bite size portions and cook in large pot, do not overcook you don't want it crispy, add the cut cabbage into the pot, do not drain off the grease.  Stir regularly, add salt & pepper to taste, add the sugar. Keep stirring until the cabbage is almost done cooking and add the Half & Half, continue stirring. When it is the consistency you like, you can serve and eat!


Black Bean Salsa-

2 (15 oz) cans black beans, drained & rinsed
1 (15 oz) can sweet corn, drained
5 to 6 roma tomatoes, seeded and chopped
1/2 cup sweet onion, finely chopped
1 bunch cilantro, chopped
1 jalapeno pepper, seeded and finely chopped
Juice of 2 to 3 limes
Adobo seasoning w/cumin

Mix all ingredients together and season with Adobo seasoning to your liking.  Serve with tortilla or corn chips.  Better when made a day ahead.  Enjoy!

Redneck Caviar

2 (15oz) cans blackeye peas, drained & rinsed
1 (15 oz) can sweet corn, drained
1 (10oz) can Ro-tel tomatoes, medium or hot, drained
1/2 cup sweet onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
1 (8oz) bottle Italian dressing
1 (4oz) chopped pimentos, drained


Mix all ingedients together and serve with corn chips.  Enjoy!

Did you know????
If you marinate beef in Coke or Dr. Pepper that the meat  is tenderized?  My grandfather used to do this all the time and now I read lots of recipes that call for soaking beef in Coke.  Hmmm!
Fresh Hog?
Clean and then marinate in your favorite Mojo, cut up citrus like oranges and grapefruit, add coke, let marinate for 2-3 days.  We put ours in a BIG cooler and use several bottles of mojo, lots of citrus, and a couple liters of coca-cola. Throw some garlic in there, and wow wee, it is good!
